Ingredients of Roast Chicken with Potatoes:

  • 1 whole chicken cut in approximately 12 pieces
  • 3 large potatoes washed and cut in cubes
  • 6-8 artichoke hearts
  • 5 sprigs green onions chopped
  • Few sprigs chives chopped
  • Juice of 3 limes or 2 lemons
  • 1 tsp chilli powder
  • 2 tsp pepper powder
  • 2 tsp oregano
  • 1 bunch fresh dill chopped
  • Olive oil
  • to taste Salt

Method for "Roast Chicken with Potatoes":

  1. In a cup mix lemon juice, oregano, chilli, pepper powder, salt and set aside
  2. In a skillet heat a tbsp olive oil and add chopped chives and onions and cook until wilted about 5-8 minutes, set aside
  3. In a large bowl place chicken pieces at the bottom, layer potatoes above chicken pieces, layer artichokes, now add chive and onion mix
  4. Pour the marinade into the bowl, mix together throughly and set aside for 1/2hr
  5. Set oven to moderate /180 degrees celsius
  6. In a baking tray, place potatoes at the bottom of the tray place chicken on top, pour in the marinade on the chicken pieces, drizzle 1/2 cup of olive oil and bake for 50 minutes
  7. Remove chicken pictures and keep warm and bake potatoes for about 40 minutes or until crusty
  8. Mix chicken pieces, cover and set aside for 8 minutes before serving
  9. Enjoy with a side of salad.
